Basic Recipe:

All ingredients must be at room temperature.

  • Butter - 120 g
  • Eggs of category C 0 (large) - 2 pcs.
  • Sugar - 150 g
  • Kefir - 250 ml.
  • Flour - 250 g

How to cook muffins on kefir:

The first thing to do is heat the oven to 180 C. Let it heat up for 15 minutes or more, so that by the time the cakes appear in it, it will be thoroughly warmed up.

Now put the butter in a saucepan and heat over a fire until it becomes liquid. The butter should melt completely and then cool to room temperature. If we add hot butter to the dough, the eggs will curdle.

Break the eggs (2 pcs.) into a wide bowl and start stirring with a mixer at medium speed.

When foam appears, add granulated sugar in a thin stream. You can put a glass of sugar next to the whisking bowl and add a tablespoon at a time so that the sugar is added gradually, rather than getting enough sleep all at once.

At the end of whipping (it takes me 5-8 minutes for the whole process), the egg-sugar mass should look like a thick white foam. Looking into the bowl, it’s even hard to believe that there are yolks in it (in appearance, the mass looks like we are going to bake).

Now pour in the butter in a thin stream (I remind you that the butter should cool to room temperature by this time). We stir again.

Kefir should be preheated and cooled. Add cold kefir to the dough! But even hot can harm the fact that the eggs curl. Therefore, either take it out of the refrigerator in advance, or heat it in a saucepan on the stove (or microwave) and cool. Pour kefir into the dough and mix lightly.

All dry ingredients: flour (250 g), salt (a pinch), baking powder (2 tsp) are combined together and stirred with a whisk. Don't skip this step if you want fluffy, evenly risen muffins.

Now we combine the dry ingredients with the liquid ones with a spatula, trying not to lose air in the beaten eggs with sugar. Raising from the bottom up movements we achieve a homogeneous dough without large lumps. The dough should not be perfectly smooth, otherwise, in an attempt to achieve such uniformity, you will overkill the dough and it will lose airiness. Now we put paper substrates in the form and pour the dough into portions. It's easy to do this with an ice cream scoop.

Muffins are baked at a temperature of 180 C for 20-25 minutes. Readiness start checking from 15 minutes (provided that the caps are already reddened). You can pierce the muffin in the center with a toothpick - it should come out dry. If the surface of the muffin is ruddy, springy when pressed, an appetizing smell comes out of the oven - the muffins are ready.

There are many options here: add finely chopped nuts, candied fruits, a small amount of berries, raisins or other dried fruits to the finished dough. Cooking:
Whisk eggs with sugar and vanilla. Melt the butter and add it together with kefir to beaten eggs, mix and add flour with baking powder. Knead the dough of the density of sour cream. Add honey, mix and pour (about ⅔ molds) the finished dough into greased molds. Send the cupcakes to the oven preheated to 190ºС for 15-20 minutes.

Lemon kefir cupcakes

Ingredients:
For cupcakes:
350 g flour
200 ml of kefir,
200 g sugar
180 g butter,
2 eggs,
1.5 large lemons (zest and 3 tbsp juice),
⅓ tsp soda,
½ tsp salt.
For impregnation:
6 tbsp sour cream 20% fat,
5 tbsp Sahara,
3 tbsp lemon juice and some lemon zest
citric acid - on the tip of a knife.

Cooking:
Beat soft butter until white foam, gradually adding sugar. Continue beating for about 8 minutes. Remove the zest from the lemons and squeeze out the juice, strain it through a fine sieve. Add 1 egg at a time to the beaten butter and sugar, beating thoroughly for 3 minutes after each. Then add lemon zest and beat for 1 minute. Add soda to flour and sift through a sieve into another bowl. Add salt to the sifted flour and stir with a spoon. In the dough with eggs, add 2 tbsp. flour, 2 tbsp. kefir, 1 tsp lemon juice and start mixing, gradually adding these products in the same proportions until everything is over. Knead the dough from bottom to top until smooth. Grease a mold or molds generously with butter and fill them ¾ full. Place in the oven, preheated to 180ºС, for 50 minutes for a large cake and for 20-30 minutes for small ones. Carefully remove the finished cupcakes from the mold and leave to cool if your molds are made of silicone. If the cupcakes are metal, be sure to let the cupcakes rest under a towel for about 15 minutes. While the cupcakes are cooling, prepare the lemon curd. To do this, beat all the ingredients for impregnation into a lush foam and put the whipped mass in the refrigerator for 30 minutes. Then dip each cupcake with the top in the impregnation, hold in it for 30 seconds, turn over and carefully place on a plate. Sprinkle the finished cupcakes with lemon zest.
