Many housewives prefer not to mess with yeast dough, they say - it doesn’t work! But, my dear, yeast pies bring comfort to the house. When the smell of pies wafts through the house and your family gathers together at the table - this is happiness!

To prepare heart pies, we need the products indicated in the list. The heart was pre-cooked and cleaned.

We have excellent fresh beef heart. Soak it for half an hour in cold water, then send it to boil. When a knife or fork easily enters the meat, it is ready, take it out and cool it. We clean off all the fat, blood vessels. We leave only the meat, which we grind through a meat grinder.

Finely chop the mushrooms and send to sauté.

Finely chop the onion, rub the carrots and send to sauté.

We combine mushrooms, onions and carrots. We send to the ground heart, salt and pepper to taste.

Let's start preparing the dough. Be sure to sift the flour.

We send liquid ingredients, eggs and milk to the bowl of the bread machine.

Then add flour, sugar, salt, butter and yeast. Turn on yeast dough. This will take us 1 hour and 50 minutes.

We divide the finished dough into portioned pieces.

Roll out each piece into a circle.

On each circle lay out one and a half tablespoons of filling. We love when there are a lot of toppings.

We pinch in the shape of a triangle with one sharp corner.

It turns out such a triangle. On one side we make a dent, after which the pie is shaped like a heart.

Lay the pies on an oiled baking sheet. Leave in a warm place for 20-25 minutes, letting them rise. Then grease with yolk and send to the oven. Bake at a temperature of 200 degrees ~ 20 minutes.

Heart pies are ready!

It is difficult to find a person who does not like pies. And if the filling is meat, then even more so. The pig's heart has nutritional value similar to meat. It is very healthy, nutritious and tasty. We offer a recipe for baked pies with pig's heart. The beef heart filling differs only in the cooking time.

We offer to bake pies with a pig's heart in the oven from yeast-free dough in milk with vegetable oil.


For test:
- flour - 4.5 cups
- dry yeast - 1 sachet
- milk - 350 ml
- sugar - 1.5 tbsp. spoons
- salt - 1 teaspoon
- eggs - 2 pcs.
- vegetable oil - 30 ml

For filling:
- pork heart - about 800 g
- onion - 2 pcs.
- carrots - 1 pc.
- vegetable oil - 3 tbsp. spoons
- eggs - 2 pcs.
- curry seasoning - ½ teaspoon
- salt, ground black pepper - to taste

Additionally:
- vegetable oil for greasing the baking sheet - 2 tbsp. spoons
- egg for greasing pies - 1 pc.

Cooking pies with a pig's heart

1. Pour warm milk into a deep bowl, dilute the yeast in it, add sugar, salt, vegetable oil, break the eggs and lightly beat the liquid mass with a whisk. Gradually adding the sifted flour, knead a soft elastic dough. Cover the dough in the bowl with a tea towel and leave in a warm place to rise for about 1 hour.

2. Pig heart wash, pour cold water, add the peeled raw onion, peeled carrots, bring to a boil and cook for about 40-50 minutes, until the heart is ready.

3. In the meantime, boil hard-boiled eggs, fry the peeled and chopped onion in vegetable oil until golden brown.

4. Cut the boiled heart into large pieces, pass through a meat grinder, add to the pan to the fried onions and simmer together for 1-2 minutes.

5. Remove from heat, add chopped eggs, chopped boiled carrots, curry seasoning, salt, pepper and mix. If the filling came out too dry, add a few tablespoons of the broth in which the heart was cooked.

6. Punch down the risen dough and leave to rise for another 35-45 minutes. During this time, it should double, or even more.

7. Form the dough into rolls, cut them into equal pieces, roll out the cakes and mold the pies with the filling.

Our winter apparently decided to push spring back, for a month or so, a damned unpleasant piercing wind and, to the bone, penetrating cold, did their job - Gio and I fell ill completely and completely. If I can still warm up and be treated at home, then it’s harder for my husband - for him colds have to be carried on the feet.
I categorically do not like bed rest, because (if possible) I find something to do, for example - I baked lean dough pies stuffed with beef heart.

The pies turned out so tasty that even non-offal lovers ate them.

Recipe:
for the test
200 gr flour
75 ml warm water
30 ml vegetable oil
1 tsp salt
1 tbsp Sahara
5 gr yeast

Knead the dough by adding vegetable oil. Form a ball, grease it and the bowl with oil.

Cover with a towel and let rise for an hour.


Divide the dough into equal parts, roll them into balls. Each ball needs to be flattened and stretched out a little so that there is still more filling than dough :))

Put a tablespoon of the filling in the center of the resulting cake. Blind the pie.

Continue until you've covered everything.

Heat vegetable oil in a frying pan. Approximately 3-4 tablespoons, see that it is enough and nothing burns.

Fry the pies until golden brown. Leave on paper towels to drain excess grease.

Now oh stuffing.

Since offal is not very popular in our family, I nevertheless decided to cook pies with them, for the sake of experiment. And I must tell you - I was not mistaken.

For filling:
500g - beef heart
2/3 tbsp - long grain rice
1 large - onion
1pc - egg (hard boiled)
Spices: salt and freshly ground black pepper

Actually, I didn’t start making pies with the dough, but with the filling, since the beef heart must first be boiled. And it will take time, whatever one may say.
Rinse the heart, cut it in half. Pour cold (!) Water, let the water boil and drain the first water, changing the pan to another (clean). We wash the heart and pour cold water again. Next, let it boil, reduce the heat and cook until tender. 40 minutes before readiness - salt the water. The heart will be soft, tender.

Boil rice.
Then, cut the heart into pieces and chop (meat grinder).
Chop the onion and fry (until transparent) in vegetable oil.
Finely chop the egg.

Combine onion + minced meat + rice and egg. Mix. If the filling is dry, dilute it with broth (in which the heart was cooked). Salt and pepper.

Various offal, such as the heart, liver, kidneys, are quite often used in the preparation of various fillings. Pies, small pies and even dumplings are prepared with them. The high demand for these products is explained by the fact that they are very useful, always available and much cheaper than meat.

Please note that any offal requires special preliminary preparation: the heart must be washed well in cold water, then put in salted water and boiled for a long time, it is better to drain the first broth.

It is also better to prepare the dough for pies in advance, since you will have to spend quite a lot of time, but cooking and frying the pies themselves is very simple and does not take long. All your efforts will pay off completely, because the pies are tender, airy and very tasty. And they are ideal if they are cooked on kitchen appliances from the Kitchen Aid company.

Ingredients:

  • Boiled rice - ½ tbsp.;
  • Boiled beef heart - 300 g;
  • Onion - 2 heads;
  • Vegetable oil - 1-2 tbsp. spoons;
  • Milk - 1/2 tbsp.;
  • Flour - 400 g;
  • Butter - 100 g;
  • Egg - 1 pc.;
  • Sugar - 1 teaspoon;
  • Egg yolks - 3 pcs.;
  • Salt - to taste;
  • Dry yeast - 10 g.

Cooking method:

  1. First you need to sift the flour.
  2. Dilute dry yeast and sugar in warm water (about half a glass), leave for 20 minutes.
  3. After 20 minutes, pour half the flour into the pan, add yeast and sugar, mix everything well and leave for an hour in a warm place, covering the pan with a towel.
  4. After an hour, add egg yolks to the dough, beat everything, salt to taste, add warm milk, butter(it should be warm and soft), the remaining flour.
  5. Sprinkle the table with flour and knead the dough (if it sticks to your hands, you can add more flour to it).
  6. Transfer the tests to a bowl or pan, cover with a towel and leave for another 1-1.5 hours.
  7. Now you can do the filling for the pies, for this, the pre-boiled beef heart must be passed through a meat grinder.
  8. Peel the onion, cut it into small cubes.
  9. Fry the onion over medium heat until it becomes soft.
  10. In a separate bowl, combine the fried onion, boiled rice and chopped beef heart together, add salt and pepper, mix everything thoroughly.
  11. After the dough has stood for 1-1.5 hours, it must be removed from the pan or bowl, rolled out into a layer about 0.5 cm thick.
  12. Using a mug or saucer, cut out mugs from the dough.
  13. Put a tablespoon of the filling on each circle and pinch the edges, forming a pie.
  14. Put the finished pies on a baking sheet covered with parchment paper, grease each pie on top with a raw beaten egg.
  15. Put a baking sheet with pies in a preheated oven, bake them at 180 degrees for 15-20 minutes.

They say that the most successful use of the veal heart in cooking is all kinds of fillings. You can cook large pies, heart pies, dumplings and even. And if you consider that there are many varieties of dough for all these dishes, then the number of options is huge! Try to cook fried pies stuffed with heart and green onions - you will definitely like them!

Ingredients:

  • veal heart - 2 pcs.
  • green onions - 2 stalks
  • egg - 1 pc.
  • sugar - 2 tbsp.
  • yogurt - 1 tbsp.
  • salt - ½ tsp + some salt for topping
  • soda - ½ tsp
  • flour - 10 tbsp.
  • vegetable oil for frying.

Cooking


  1. The heart takes a long time to prepare. So let's start with the preparation of the filling. We take two calf hearts, wash them well and cut off excess films.

  2. We put the hearts in a saucepan, fill it with water and put it on the fire to boil. Salt the water and add spices to taste: for example, allspice peas.
  3. The heart is cooked for about 2 hours. After this time, turn off the fire, take out the veal hearts on a plate and cool them.

  4. Cut the heart into pieces and put in the bowl of a food processor. Now you need to grind the heart, turning it into minced meat. You can also use a meat grinder.

  5. Finely chop the green onion and add to the minced meat from the heart. The stuffing from the heart for pies is ready! Let's start preparing the dough.

  6. Break the egg into a large bowl, add sugar to it and mix.

  7. Add yogurt and stir as well. For the test, it is better to use yogurt without additives or regular kefir.

  8. Add baking soda to the mixture and mix very well.

  9. Then carefully, one spoon at a time, add flour to the dough. The thing is that the dough for fried pies should not be as thick as for baked pies. By consistency, it will resemble curd mass. Therefore, add flour gradually so that it does not turn out to be too much.

  10. Knead the dough with your hands for 5 minutes and leave for 10 minutes so that it comes up a little.

  11. Sprinkle flour on the table so that the dough does not stick. We take a small part of the dough, put it on the table and roll out the cake - the basis of the pie.

  12. Put the filling from the heart on the center of the cake.

  13. Now you need to blind the edges of the cake, thus turning it into a pie. We make pies from all the prepared dough.

  14. Put the pies on the preheated pan with vegetable oil.

  15. And fry them on both sides. Pour enough oil so that the pies are immersed in it by about half.
  16. Fried pies with a heart are ready! Lay them out on paper towels or paper towels to remove excess oil, then serve.
