Speaking of wild rose, first of all, it means its red, shiny fruits, which are strewn with thorny bushes. However, collecting a few kilograms of this good will not be difficult. But it should be collected away from the roads, somewhere in the forest or park outback.

What is good about rose hips is the ability to use them all year round, so in your herbal first aid kit they should be on par with and sea buckthorn oil- always at hand. But for the whole year, most herbalists do not have enough of it - they did not dry it enough. To prepare the right amount of raw materials, work should begin in September. Until October, the fruits will have the optimal amount of vitamins, which will disappear with the first frost.

For drying, it is recommended to take slightly unripe fruits, which are distinguished by a hard, shiny surface. It is important to preserve the receptacle and stalk when harvesting - this minimizes the loss of vitamin C during drying. Pay attention to the direction of the leaves of the calyx: if they are directed upwards, you have a high-vitamin look in front of you, which should be collected. But in a low-vitamin rosehip, the sepals are bent down - the benefits of such fruits are minimal.

How to dry rose hips - save vitamins

The popularity of rose hips is due to its ability to preserve vitamins better than others. However, much depends on the harvesting methods. Someone dries in the attic, spreading it out in a thin layer, someone in the stove. However, these methods have disadvantages: raw materials can rot in the attic, lose useful properties in the oven due to too high a temperature.

The most versatile and convenient way drying - in the oven. It is important to dry the fruits immediately after picking, and not after a day or two. The longer you put off drying, the less vitamins will remain in them. The faster the drying process occurs, the more vitamins will be preserved. Before you send the rose hips to the oven, you should not wash the fruits - having laid them out on metal sieves, you should immediately begin the process.

You are probably interested in the question of how to dry rose hips in the oven so as not to bake the fruits? The optimal temperature to start with is 40 ° C, gradually raise it by another 20 ° C. It is no longer possible to increase the temperature - the peel will harden much faster than the core, retaining moisture inside. And this is fraught with damage to the product in the future. It is important to keep the oven door ajar to prevent burning. In total, drying will take up to 10 hours.

Rosehip - how to store vitamins?

After this lengthy procedure, the fruits should be poured into a tight box or box so that the so-called “sweating” occurs - simply put, moisture equalization. This process will take up to 3 days.

Further storage - in tightly closed boxes, jars or cloth bags. The container must be clean and without any foreign odors. To prevent the vitamin complex from being destroyed during storage, keep boxes, boxes and bags away from sunlight. Rose hips can be stored in such a canned form for up to two years.

Drink a decoction of wild rose with the addition to boost immunity during the winter colds and flu. He is also appointed to traditional medicine, for example, in case of kidney disease or to strengthen blood vessels. Dried fruits can be used both as part of various herbal preparations, and on their own. Remember that rose hips have a hundred times more vitamin C than apples!

But not all rose hips are suitable for consumption, and even more so, not everyone is able to cure you of ailments. Only properly prepared fruits can be included in your recipes, because otherwise, you can provoke harm to your body. In this article, we will talk about how to properly process the berries and at what temperature the rose hips are dried in the oven so that even in the cold winter you can enjoy your favorite taste and use them for medicinal purposes.

Training

The key to proper drying is the correct approach to the preparation of berries. Unfortunately, due to lack of knowledge, many people make mistakes in this process, as a result of which the berries also lose their beneficial properties.

Do not rinse rose hips in cold water. It is better to fill a container with hot water and lower the berries there for 10 - 15 minutes.

After the time has passed, drain the water and rinse the berries. So they will be washed much better and will not lose their vitamins. But immediately after this procedure, it is still impossible to dry the dogrose. Leave the fruit tray in a dark room for one and a half or two hours. During this time, the berries will dry out and will be ready for further manipulations.

Before putting the berries in the oven, need to sort them out. Remove rotten or very unripe berries. They are of no use to you.

Don't cut off the stem, otherwise, from heating the temperature, all the juice will flow out and there will be no useful properties left in the dogrose. Many make a big mistake and cut the berries in half. This should also not be allowed, because the juice will not linger inside the fruit. This completes the preparation of the berries, and we proceed to the procedure for drying the rose hips in the oven.

What to dry?

Dry the berries should be on a baking sheet covered with special paper. It's good if your baking sheet or baking dish is clean and used for the first time. Do not smear the surface with anything. Before the berries fall on it, everything must be dry. Berries should be arranged so that they do not touch each other. Otherwise, the fruits may stick together and release the juice when torn off.

If all the fruits do not fit on one dish - do not be discouraged. It is better to repeat the procedure, because it is in your interests to get excellent, tasty, and most importantly - healthy berries.

It's a question of time

The oven should not be heated until the moment when the berries fall into it. Only after the baking sheet is inside, and start heating. According to general observations, berries can dry from five to seven hours, while the position of the baking sheet in the oven should be exactly in the middle.

Drying mode

Mode for drying berries better to bake. It is with this method of heating that the oven is able to dry the fruits in record time. a short time and at the same time, without taking away their useful properties.

Temperature regime

So at what temperature do rosehips dry in the oven at home? Drying of berries is supposed at a temperature of 50 - 70 degrees. According to the experience of many enterprises, it is this temperature that is ideal for drying and is not capable of harming the berries.

We determine readiness

If you are doing the drying procedure for the first time, then you need to know how to determine the readiness of the berries. Firstly, focus on time. After selecting the desired temperature, note the time and after it, turn off the oven and remove the berries.

If you doubt that you can correctly calculate the temperature and time frame, then take a closer look at appearance . The rose hips should take on a copper hue, while becoming slightly transparent. But when they cool, you can taste the pulp and a little moisture in the form of juice.

Electric oven

We asked ourselves: “How to dry rose hips in an electric oven?”, Since you don’t have gas available, then you should read the section below.

Distinctive features

Drying in an electric oven is different from drying in a gas oven. Let's see what these differences are. Electric oven is drier than gas, so it can much faster turn rose hips into a dried fruit devoid of nutrients. That is why the drying process in such an oven should be under your careful supervision.

So, how long to dry rose hips? The time for the procedure should be much less, about four hours. The temperature should be set at forty degrees, because the electric oven heats up faster than the gas one, which means that the wild rose can lose juice from a sharp temperature drop.

Gradually, in four hours, bring the temperature from forty to sixty and turn off the electric oven.

convection oven

If you dry rose hips in a fan oven, you should also think about lowering the temperature and reducing the drying time. The fan contributes to the fact that it will pour hot air over the berries with such force that the juice from them can pour out at any moment, which means that there will be no useful substances left.

That's why lower the temperature to forty degrees, and leave the time of its exposure to the berries at five hours. Do not forget to periodically check the berries for readiness. Now you know how to properly dry rose hips in a fan oven.

Drying Recipes for a Gas Oven

Many housewives have long developed their own rules for drying rose hips in a gas stove oven, which differ significantly from accepted standards. So, for example, some set the temperature to thirty degrees and leave the berries to languish in the oven all day.

So, according to the craftswomen, the berries are more fragrant and fragrant. And here drying along with spicy herbs is good for those who prepare berries for adding to tea– the taste of wild rose and fragrant herbs is able to win the hearts of even inveterate gourmets.

Rose hips are a storehouse of vitamins and microelements, the beneficial properties of which are very difficult to overestimate. The medicinal properties of the product have been known since ancient times; healers used the fruits and roots to treat ailments.

Modern medicine recognizes the plant as a multivitamin, doctors prescribe rose hips for disorders of the gastrointestinal tract as a diuretic, anti-inflammatory and hemostatic agent, as well as an antibacterial agent.

However, not many people know how to dry rose hips at home, how to properly collect and prepare them for storage during the winter months. And these are very important details, without which the storage will be incorrect and the product may lose its healing properties. Therefore, the drying process should be carefully considered. useful plant from the beginning to the end. In addition, further storage after harvesting wild rose fruits is important. If stored incorrectly, the berries spoil and sooner or later they will have to be thrown away.

Preservation of nutrients during drying

Drying is ancient way harvesting fruits for long-term storage and use of berries in the off-season months. The peel of the fruit coarsens, becomes stone, all components are compressed due to loss of moisture, the dog rose is almost halved in size.

During the drying process, all useful properties and trace elements remain in the fruit.. But for this you need to comply with certain conditions and rules of the drying process. So, for example, it is necessary to pick berries at a certain ripening period and prepare them for drying properly. Soft rose hips are no longer suitable for harvesting for the winter.

The process itself should take place slowly, without direct sunlight. Moisture from the fruit should leave gradually. Rapid evaporation of moisture is not allowed, otherwise the berry can lose its medicinal properties. It is also important to have good air exchange in the room where the rosehip crop is dried.

With proper preparation and drying, the shelf life of fruits reaches 3 years. Berries can be stored for a longer period, but in this case, the useful properties of the fruit will decrease every day.

Traditional healers use wild rose literally everywhere in their recipes. They recommend adding medicinal fruits in all healing mixtures. But in the note to the composition it is noted that for therapeutic purposes it is better to use only berries from a crop that is less than 1 year old. The longer the storage of the harvested wild rose, the less useful properties remain in its fruits.

The composition of wild rose berries includes such elements as vitamin A, P, E, iron, manganese, copper, magnesium, phosphorus, riboflavin, tannins, malic and citric acids and other elements.

This is real multivitamin complex, which can be taken not only for treatment, but also for prevention various diseases. Doctors have been prescribing it for many decades for therapeutic and prophylactic purposes against flu and colds, to normalize the functioning of the digestive tract and other pathologies. Rose hips are also successfully used in cooking.

Rules for collecting berries for drying

In order for the harvest of dried rose hips to be really useful and of high quality, you need to know where and how to pick the berries of the plant correctly. It is no secret that fruits tend to absorb all the harmful substances that are in the environment.

Collection in city parks, front gardens and yards is not recommended, as there is a possibility that the berries have suffered from gases emitted by numerous vehicles and various industries. Today this is the main problem of large metropolitan areas. That is why it is better to harvest in “wild” places, forest belts away from the bustle of the city and gas pollution, despite the fact that wild rose grows almost everywhere in our strip.

It is very important that the weather when picking the fruit is moderately wet or dry. It is unacceptable to collect ripe fruits in the rain. Excess moisture absorbed into the fruit can adversely affect the condition of the harvested berries, preventing them from drying properly.

The wild rose, from which the rose hips are harvested, is distinguished by two varieties:

  • The first has increased content vitamins and microelements - after separation from the stalk, a wide round hole remains on the berry;
  • The second type, the so-called dog rose, with the least amount of useful properties - after tearing off, a hole in the form of a pentagon remains on the berry.

When harvesting, it is better to choose the first type of berries for their rich mineral and vitamin composition. In addition, it is necessary to collect fruits in ecologically clean places and cut them off before they fully ripen.

Hard skin with a matte surface and protruding sepals indicate that the berries are ready for collection and further drying in one way or another. You need to pluck them together with the stalk, so the vitamin C contained in the berries will be fully preserved, during the drying process they will fall off by themselves.

Preparation stage

Berries require careful processing, and you should not delay this stage, since wild rose is a perishable product. After harvesting, it is necessary to start drying on the same day or the next. Otherwise, the fruits will begin to lose their beneficial properties.

All collected fruits must be carefully sorted out, discarding all rotten, dented and spoiled. For drying, it is better to leave only large and clean berries. Then the entire crop must be poured into a colander and rinsed under a strong stream of running water, washing off street dirt. Manipulations must be carried out with extreme care so as not to damage the sepals, which keep all the beneficial substances sealed inside. Then let the berries dry.

After the rose hips are poured onto a paper towel, straightened and laid out more freely so that they can dry out faster from moisture. 1 hour is enough for the berries to become dry on the surface and ready for further processing. Some housewives prefer to cut the fruits and take out all the seeds, which takes a very long time. But this will allow you to dry the berries faster. Each hostess herself chooses how best to dry the fruits and whether they require additional processing.

Drying methods

The most elementary way to dry rose hips is in the fresh air.

After drying on a towel, the berries should be dried from excess moisture in one of the available ways, of which there are many. If this is not done, soon the rose hips will become unusable and lose all their useful properties.

There are various options for evaporating excess moisture from fruits, these can be the most primitive methods used by our grandmothers or newfangled ones, using modern electrical devices. To understand which method is suitable, you need to study all the ways how to dry rose hips.

Using the oven

In the oven, the main thing is not to dry the berries

Drying rose hips in the oven is quite simple, but takes a very long time:

  • first you need to set the oven timer to a temperature of 40-45 degrees;
  • then, when the oven warms up, place the crop of the plant on a dry baking sheet in an even layer;
  • gradually bring the temperature to 60-70 degrees;
  • an hour before readiness, you need to lower the temperature again to the original;
  • after the baking sheet is removed from the oven, you need to let the berries cool and even out their humidity in accordance with the environment, this will take a couple of days.

The process of drying fruits in the oven takes about 8-10 hours. At the same time, the cabinet door is not tightly closed, allowing warm air to come out so that the berries do not turn out baked. Also, you can not leave for the duration of the drying procedure, so that the berries do not burn. If it becomes necessary to leave, it is best to turn off the oven and continue drying when you return home.

In an electric dryer

In the electric dryer, the time should be set in accordance with the instructions.

Modern electrical appliances can slightly reduce the long drying period. For example, high-quality electric dryers allow you to expel excess moisture from the wild rose in just 7-8 hours of operation.

Each machine comes with an instruction manual. In it, as a rule, the manufacturer gives clear recommendations for drying wild rose, as well as other berries, vegetables and fruits. You just need to follow all the points indicated by the manufacturers of the goods and get a good result.

Before placing the fruits in the container of the electric dryer, they are also processed, preparing for the procedure. Rinse them thoroughly, remove damaged ones and dry them on a towel. Then they are laid out on the shelves of the electric machine in an even layer, the lid is tightly closed and turned on for a certain period. Further, the readiness is evaluated after 6-7 hours, if necessary, extending the drying time.

Other known methods

There are many ways to dry rose hips. One of them is the old grandmother's version - in the open air. This is a very popular and inexpensive method, when the berries naturally release excess moisture outdoors or indoors.

To do this, you need to spread the dogrose on a thick sheet of paper in an even single layer and place the tray in a well-ventilated room or on the street. It is important that the berries are not exposed to direct sunlight.. Otherwise, the crop will lose most of its nutrients.

After a few days, check the berries for readiness. Their peel should be petrified, and the size should be reduced by almost half. Periodically, the fruits are mixed and again placed on a tray for uniform drying. This process usually takes about 1-2 weeks.

You can dry the fruits of a useful plant in well-ventilated areas, such as a veranda or attic. This method is good for residents of private houses and summer residents. It is only necessary to mix the berries thoroughly during the daytime, and at night bring the tray into a warm room and cover the crop with plastic wrap.

The use of a microwave oven is quite suitable for drying, but is not used for a number of reasons:

  • too long process;
  • the berries do not dry out completely, remaining soft and juicy inside;
  • a large number of useful substances are killed by electric waves;
  • large amount of energy consumed.

Despite the fact that almost every family today has a microwave oven, it is not recommended to use it for drying rose hips due to the cost of the process.

Some housewives living in rural areas prefer to dry rose hips in the oven. This the right way quickly make the berries dry and store them. Some housewives prefer to add cinnamon, ginger or citrus zest to rosehip tea.

It is very important that after complete drying, the fruits have time to cool and “sweat”. To do this, a baking sheet with berries is left in the air for several days. During this time, the temperature regime and humidity are aligned in accordance with the surrounding atmosphere. This will take a couple of days. After that, you can already put the dried fruits in a rag bag or a special wooden box.

Rosehip storage options

Banking is the most common method

Wild rose prepared for the winter must be stored properly, otherwise it will lose its useful properties. The first step is to remove the remaining stalks. To do this, the berries are simply gently rubbed between the fingers, without violating their integrity. You can store the dried product in glass or tin cans with lids or rag bags. Do not tightly close the lids of the jars, as in a tightly sealed container, the fruits can “suffocate” and deteriorate.

If there are no special boxes and jars at hand, it is recommended to use any glassware, and instead of a lid, use ordinary gauze folded in four layers. It is better to store the workpiece in a dark, cool room, avoiding high humidity.

Rosehip containers are usually taken small so that about 100 grams of the product can fit in it. Properly dried berries will keep well for a long period, usually about three years. Occasionally they need to be checked and spoiled fruits removed.

If mold has appeared in the jar with the blank, it’s not worth the risk, it’s better to throw all the berries together. Most likely, something went wrong during the drying process and several berries were not completely dried. Next time, just follow the drying process more carefully, and then a useful product will always be at your fingertips, even in winter.

So, in order to prepare for the winter tasty and useful rosehip, you need to choose one of the ways to dry the fruits of the plant. What it will be depends only on the preferences of the hostess herself. An important point - do not rush, the drying process should be measured and gradual.

After all, this plant brings great benefits to the body. Moreover, all its parts are used: fruits, inflorescences, leaves, stems and roots. Although most often it is the fruits that are dried.

Which variety to choose

In total there are about 270 different varieties wild rose, decorative and medicinal. Best of all for a drying day, a European variety of brown rose hips is suitable, the berries of which reach 4 cm.

This view is one of the most useful. In high-vitamin plants, the sepal at the end of the fruit sticks out straight, while in other species it hugs the walls.

Drying is the oldest, simplest and most reliable way to preserve rose hips. During the drying process, moisture evaporates, the peel thickens and becomes petrified, but all the beneficial substances are preserved.

Important! In order for the fruits of a wild rose to be well stored, you need to properly organize the drying process. It is necessary to ensure that direct sunlight does not fall on the fruits, then the moisture will not evaporate instantly, but gradually.

When to harvest rose hips

It is worth noting that you need to collect wild rose hips as far as possible from the city:

  • in the forest belt;
  • groves;
  • on the slopes;
  • in suburban areas.

Do not collect wild rose during or immediately after rain. Excess moisture will slow down the drying process, which may adversely affect the quality of the finished product.

When to harvest rose hips depends on what parts of the plant are planned to be harvested:

  • Flowers are collected in June, before the petals begin to fall;
  • Leaves should be collected in July-August, while they are green. Until September, it is better not to hold out, because they begin to turn yellow;
  • Fruit picking can be carried out before frost, the main thing is to start picking when they are fully ripe.

How to prepare berries for drying

  1. Go through the collected ones, leaving only whole copies, without defects. Remove excess trash.
  2. The legs of the fruit must be cut off, leaving 1-1.5 cm.
  3. Rinse the berries with cold water.
  4. Spread out on a cotton cloth, leave to dry.

Advice! Do not leave rose hips in the bright sun, so that ultraviolet radiation does not destroy most of the beneficial trace elements and vitamin C.

How to dry rose hips

Let's consider several ways.

In the attic

  • It is necessary to lay out the old fabric or wallpaper.

Advice! It is better not to use a film for these purposes, because it will retain moisture, thereby increasing the drying time of the fruit.

  • Rosehip is scattered in a thin layer, into one berry.
  • The fruits will dry for about 7 days in warm weather.
  • If the layer was thin, then they can not be mixed during drying.
  • If the fruits were laid out in a thick layer, it is necessary to mix every 2-3 days. Then drying will take longer, about 12-15 days.

In the oven

This method is good if there are not many fruits.

  • Rose hips are dried at a temperature 50-60 degrees, so the oven is turned on at a minimum.
  • The baking sheet must be lined with parchment paper.
  • Rosehip berries spread in a thin layer.
  • Put in the oven, leave the door slightly ajar for ventilation.
  • You need to stir the berries every half hour.

Depending on how many berries you need to dry, the process time may vary, from 4 to 8 hours.

In electric dryer

  • It is best to dry fruits cut in half in an electric dryer, especially if wild rose large.
  • They are stacked cut side up on pallets.
  • Put the pallets on the base with the heating element.
  • Close the lid, but open the ventilation holes on it.
  • Initially set the minimum temperature level.
  • When the fruits wilt a little, you need to change the temperature regime to medium.
  • The drying process will take from 8 to 16 hours, depending on the number of fruits and the power of the machine itself. If the berries are whole, then it will take even more time.
  • The last 15 minutes, the rose hips are dried to full readiness at the maximum temperature.

In the room

This method is long and inconvenient. If the fruits are not mixed, they may become moldy. The whole process can take up to 30 days.

In air grill

  1. Rose hips are laid out on special grids of the device. The lid must be left ajar to allow air to circulate well.
  2. The blower speed must be set to maximum, and temperature at 55-60 degrees.
  3. With these parameters, the fruits will be ready in about 40 minutes.
  4. If there is not enough time, then you can put an additional 20 minutes.

in the microwave

Fruits do not dry in the microwave. Their top layer dries up, and moisture remains inside because of which the berries begin to rot and become unusable.

But for leaves and flowers, this method is quite suitable:

  • Cover a flat plate with a napkin, pour flowers on top or lay out leaves and cover with a napkin on top.
  • At maximum temperature, drying will take 2-3 minutes.

How to dry rosehip leaves and roots

  • The leaves are laid out at a small distance from each other. It is necessary that the room is well ventilated, but direct sunlight does not fall on them. Leave until the structure of the leaves becomes brittle, then place in a glass dish. Close jars with lids and store in a dark place.
  • The roots are harvested at the end of autumn, when there are no fruits and leaves left on the shrub. It is necessary to choose small roots, without touching the central ones, so that the bush does not die. Remove dirt and dry in the same way as the leaves. With kidney stones, a decoction based on rosehip roots is often used.

Shelf life of dried rose hips

If the fruits have been dried and packaged correctly, they can be stored for up to 3 years. It is necessary to check periodically for the presence of fruits with mold and remove them. It is better to pack berries for storage in a small container, 100 grams of the finished product.

It is better not to close the container with wild rose tightly so that it does not deteriorate. Fold them for storage either in a container or in fabric bags. You can pour it into glass jars, but instead of a lid, use gauze folded in 3 layers. Store finished raw materials in a dark place with good ventilation.
